For extra batter from cupcakes or muffins, I use an aluminum cupcake liner or one of my ramakins. The ramakin is a little big, but for a chefs tester it works.

Found a slightly out of date box of my favorite muffin mix this morning so I’m baking that today. It’s raining again so I can’t get out to the garden.

They look tasty, streusel toppings on muffins is a good thing.

That's what we used to do, when they came by during baking time.

Those are bad, but from scratch is so much better.

out of date baking mixes usually need a bit of fresh baking powder! box mixes become more like from scratch when you tweak them. I would substitute applesauce for oil, add another berry for mixed berry muffins, etc

Yep! I like these a lot. I like the texture and the fact that they aren’t as sweet as most of the recipes I’ve found for homemade.
