Found a slightly out of date box of my favorite muffin mix this morning so I’m baking that today. It’s raining again so I can’t get out to the garden.

Those are bad, but from scratch is so much better.
out of date baking mixes usually need a bit of fresh baking powder! box mixes become more like from scratch when you tweak them. I would substitute applesauce for oil, add another berry for mixed berry muffins, etcFound a slightly out of date box of my favorite muffin mix this morning so I’m baking that today. Yep! I like these a lot. I like the texture and the fact that they aren’t as sweet as most of the recipes I’ve found for homemade.They look tasty, streusel toppings on muffins is a good thing.
