Alright folks, I finally found my recipe, so it's time I shared my very favorite chocolate chip cookie recipe! It's an oatmeal chocolate chip cookie, and it happens to be vegan and gluten free! My friend sent it to me many years ago.

The Heart-Healthiest Chocolate Chip Cookies in the World

2 c raw, unsalted walnuts (230 g)

3 T canola oil (45 mL)

1 c light brown sugar (220 g)

1/2 c water (118 mL)

2 t vanilla extract

2 c rolled oats (will become oat flour) (180 g)

1 t baking soda

1 t salt

1/4 t ground cinnamon

2 c rolled oats (180 g)

1 1/2 c chocolate chips (240 g)

(tool for converting volume to weight)

1.) Preheat oven to 350 F (177 C). Coat 2 baking sheets with cooking spray or line with a Silpat or parchment paper.

2.) Blend 2 c rolled oats in food processor until it makes a fine meal, sort of the texture of a finer almond flour. Pour into separate bowl.

3.) Blend walnuts in food processor until ground into a fine meal. Add canola oil and blend until it's the consistency of natural peanut butter, scraping down the sides of food processor occasionally. Transfer to heatproof bowl.

4.) Whisk together brown sugar and water in a small saucepan and bring mixture to boil. Pour over walnut mixture, add vanilla, and whisk until smooth.

5.) Whisk ground oats, baking soda, salt, and cinnamon in a separate bowl. Stir into walnut mixture. Cool 10 minutes. Fold in 2 c whole rolled oats, then chocolate chips.

6.) Scoop cookie dough into 2-inch balls, and place 2 inches (5 cm) apart on prepared baking sheets. Bake 10-12 minutes, or until cookies begin to brown and tops look dry. Cool 3 minutes on baking sheets, then transfer to wire rack to cool completely.

Nutrition facts per cookie:

173 cal, 3 g protein, 10 g total fat (3 g sat fat), 21 g carbs, 0 mg cholesterol, 122 mg sodium, 2 g fiber, 12 g sugars.

Enjoy! My family calls these "the good cookies."
 
I should try this Champlain loaf all y'all are talking about. I've gotta get Lois out of the fridge and happy again!
Yes you do! The thing about sourdough baking that had me stumped was the timing of things. This one you stir together before you go to bed, do a couple stretch and folds the next morning, then shape, put in the basket and bake when it’s puffy. I could get my head around it using this recipe. Now I think I could try others but this works so well for me I haven’t bothered. It calls for 3 different kinds of flour but I’ve used just white, all three and just white and whole wheat and every loaf has been great. Do give it a whirl!

I copied that and plan to try it out! DH's favorite cookies are oatmeal with butterscotch chips, so I might try that with this recipe.
