Any Home Bakers Here?

Is it too much for a teenager? I am under 18 so am not allowed to drink alcohol. (I am only fermenting it for 3 days.)
I had a batch of plum wine go from 0% alcohol to 15% alcohol in 5 days. The only way to keep the alcohol content down is to keep the sugar content low.
 
Wow! How did you measure it?
You measure the specific gravity of the original solution with a hydrometer. Then measure the final solution with the same hydrometer.

Subtract the final reading from the first reading and multiply by 131.25 to find the final % alcohol.
