New Recipe: Homemade No Knead Rolls
in a bowl 1 1/2 cups warm water
1 teaspoon sugar 1Tablespoon Yeast STIR wait 5 mins
add 3 Tablespoons avocado oil
3 1/2 cups flour (moist dough..may retain 1/4 c flour to use to shape rolls....(dough should not be dry).
2 teaspoons salt
STIR with spoon, spatula, Danish Whisk your choice
Cover rest on counter 20 minutes
Do 4 Stretch and Folds with 10 minutes rest between
each stretch and fold. Place back in the bowl cover
and let rest for 1 hour. Punch down..flour on board and divide into 12 pieces. Shape into rolls.
Place on parchment lined cookie sheet for 45 min
Score down middle of each roll...bake for 20 -25 minutes. 400 degree oven

First off, I am okay. Not hurt, but man, the roads are bad! I was going 20 mph from my elk hunting spot and I spun out. Did a whole 360 and got stuck.

Two hunters came by a minute later and helped me get out.

I’m home now, but THAT was scary!

Anyway, my uncle and aunt apparently paid for a package of meat from omahasteaks.com and had it mailed to us. It arrived when I got home. That was so nice of them!
