Now a question on the recipes on here that say to use bread flour can one use regular AP flour?

Yes, you can use All Purpose Flour.

From what I've been able to find, you can add 1 extra Tablespoon of AP flour for every cup of bread flour as a substitute. So if your recipe calls for 2 cups of bread flour and you need to sub AP flour, you'll want to use 2 cups + 2 Tab. of AP flour.

Does that make sense?
 
I do use both interchangeably depending on what I have but I do think the bread flour makes a better loaf.

I like the brown sugar idea, that would be nice with sultanas or such in it too.

Having a bit of a bread making disaster here today. I added the small loaf recipe water and the large loaf everything else. Took me a minute to work out what on earth I'd done wrong when I saw the lumpy crumbly dough half way through the rise cycle in my breadmaker. I pulled it out and added the rest of the water and then it took a good ten minutes in my mixer with the dough hook for it to look like dough and not soggy mush. I left it to finish rising and have just worked again and put in the bread pan. Will be interesting if it is edible at the end lol

Yes, you can use AP flour instead of bread flour - usually with only a slight difference in texture. I add a tablespoon of Wheat Gluten to my bread dough since I use AP flour. That makes up for the lower gluten content of the AP flour.

I am wondering if anyone has a good Corn Bread recipe?
started some Chili in the crock pot for tomorrow I figure if I still feel icky I will sweat it out with the chili

I know northern roots are showing with kidney beans in the chili.

and truth time I usually use Jiffy corn bread mix (I add frozen corn to the mix so it looks homemade

) but I wanted to try a scratch recipe this time.

HaHa! Jiffy is so wonderful! I use it all the time. I even use it mixed with flour when I bread chicken/chops for frying. I use kidney beans in my chili as well.
