Any Home Bakers Here?

When I was set up at Farmer's Markets I would get up at 4:00 am to pick and wash veggies, then feed the livestock, then load the truck, quick shower, and get to Market. Set everything up and start greeting customers around 7:45 am.

Home around 3:00pm, unload, do evening chores, feed the family, then crash. Those were some long days, but thankfully only 2 days a week.

Before that I've pulled night shifts, gotten up a 2:00 or 3:00 am for travel/catch a flight, and was usually up before 6:00 for school/work/farm.
These days I'm a lazy cuss and generally try to avoid getting up before dawn.
 
I googled it and found some tasty and easy looking recipes, then modified one (original one under the spoiler) for gardeners, while also avoiding the dry bean types.

Easy to make, easy on the system, and easy to modify. Use as much, or as little veggies as you like.

Snappy's Easy Taco Stew

1 lb ground meat (beef or turkey)
1/2 an onion
2 or 3 cloves of garlic
1 qt canned diced tomatoes (or whatever style you like)
1 qt tomato sauce
1 qt frozen mixed garden veggies **
3 or 4 cups corn
Water
1 pouch taco seasonings (Old El Paso is GF, lactic acid free, and no caramel coloring)


Brown ground meat with onions and garlic
Add mixture to a slow cooker
Add all other ingredients, using water to swish out the jars
(Less water equals stew, more water equals a hearty soup)
Cook on low about 6 hours
Serve with toppings of choice

** Towards the end of gardening season, when I am only getting a handful of veggies like zucchini, green beans, tomatoes, etc... and it's not enough of one thing for any specific recipe (and I'm sick of them anyway) ...every few days I chop/dice whatever "they" are into a quart freezer bag together and freeze. I call them meal bags, and about mid-winter they are wonderful to add to any soup, stew, casserole, or whatever.

Just be sure if you freeze tomatoes whole, remove the stem core top first.

Taco Soup normal recipe-

1 lb ground beef
1 onion, diced
1 16oz can chili beans
1 16oz can kidney beans
1 16oz can corn
1 8oz can tomato sauce
2 14.5 oz cans diced tomatoes
2 cups water
1 taco seasoning pouch

Brown ground beef with onions and drain fat.
Add beef and onions to slow cooker
Add all other ingredients to slow cooker and stir to mix
Cook on low around 6 hours
