You should taste the filling, I have to discipline myself or I will eat the whole bowl before any goes in the eclairs, lol! I made pastry creme from scratch, not vanilla pudding. Labor intensive but worth it. Still have to make the ganache but had to sit a minute.

I may not be able to eat the pastry part of the eclair anymore, but I darn sure can eat the creme filling and frosting. I'll be right over to make sure you don't eat all the pastry creme.
