I watched the weather channel from 0230 till 0600 this morning.

Daytona Beach really got hit bad, as well as St. Augustine, and Jacksonville.

The inland areas do not appear to be that damaged.

Curious now that I have fresh eggs from my own chickens.
Does anyone here pasteurize their eggs for those recipes where eggs are not cooked (liked whipped in a mousse)?
I used to pasteurize them myself when they were store bought. It's an extra step I was thinking I might be able to skip with my own fresh eggs.

Pardon my ignorance but how do you pasteurise eggs?
