Any Home Bakers Here?

I decided to boil down some sap every day, because if I have too much, I will be boiling sap into the night. It’s better if I boil a little bit every day and add to this.
Are you using a flat tray like vessel to boil in? It takes a lot longer, and uses more fuel, if boiled in a pot.

I did not know that a tray like that can help. I’ve been using a pot this whole time.

I’ll have to track down a tray like that for next time.

You want something with a large surface area so the water can boil off faster. With the volumes you are doing I think a roasting pan or the bottom of a broiler pan would work fine. They would double if not triple the surface area of a pot. Though .... as I think if it, you don't want the liquid to be too shallow, it might burn before the water evaporates. Your pot might be the right thing! Trial and error I guess.

Look at THAT!

1.765625 gallons of Norway maple sap gave me this in two days! At night, I paused boiling until morning.

Looks good.

I baked a frittata today. I got my first harvest out of the garden -- Egyptian Walking Onions to use in it. I've never gotten anything from the garden this early! Usually my first "harvest" is lamb's quarter, ie weeds.

Of course, I had to try the frittata, and yes, it was delicious!
