No, for now she has hives, and they are getting better the last few days. She mentioned it to her doctor, but that appointment is a few weeks away.I really hope your friend does NOT have celiac. Has she been diagnosed?
If it’s only hives and this late then she probably just has a gluten sensitivity (since celiac is severe), also at stores there’s normally good gluten free flour mixes that taste better than if you just use a singular flour.My friend thinks she has celiac disease. I don’t think so, but for now I’m using the knowledge I have (including from non-bakers) from my years on BYC to make foods without wheat.
She’s in love with the pb cookies (from NFC I think) and oatmeal pancakes.
