I dug up that recipe I said I would a few days ago. I will give it a name for the index.
SOURDOUGH and YEAST raised bread.
I don't have play by play, but here is the recipe I snapshot from my paper recipes.
First line where the hole is from punch is;
1 tablespoon active dry yeast.

This recipe uses a bread machine to do the mixing. I don't have a bread machine, so I used my stand mixer to perform Step 1.
I simply mixed, and left for first rise in bowl. Then when dough doubled in size, I went to Step 2.
The 3 tablespoons of Wheat-germ, is just part of the recipe, that adds flavor to the bread. It is not a necessity. I did not have any, so I just skipped it.
The Margarine can also be substituted with butter.
