Hello everyone! I haven't been active on BYC in a while, and as a result it has been nearly a full year since I checked in on this thread! How have you all been??
I have quite a lot of whole wheat flour that I need to find some uses for, so I thought I'd ask the bakers here what your favorite whole wheat flour recipes are! I'm planning to make an artisan-type bread in a dutch oven soon, but I'm not sure what else to use the flour for, so I would be glad to hear any recipe recommendations you have!

Most dog treats use wheat flour. Also, pancakes and waffles are good with it.
 
Not that you asked:

Peanut Butter Dog Treats.

2/3 C pumpkin puree or apple sauce

1/4 C peanut butter

2 large eggs

2 1/2 - 3 C whole wheat flour

Mix it all together. Form into a ball, and then roll out flat (1/4 inch or so thick). Cut into shapes. Put on an ungreased cookie sheet. Bake in a 350 degree oven for 20 -25 minutes. Flip, and bake them another 10-20 minutes to harden. Cool completely.

Plain Muffins (wheat recipe towards the middle)

INGREDIENTS

2 cups white flour

1 tablespoon baking powder

1/2 teaspoon salt

2 Tablespoons sugar

1 egg, slightly beaten

1 cup milk

1/4 cup melted butter

PREPARATION

Preheat the oven to 375°F. Butter muffin pans. Mix the flour, baking powder, salt, and sugar in a large bowl. Add the egg, milk, and butter, stirring only enough to dampen the flour; the batter should not be smooth. Spoon into the muffin pans, filling each cup about two-thirds full. Bake for about 20 to 25 minutes each.



Blueberry Muffins.

Use 1/2 cup sugar. Reserve 1/4 cup of the flour, sprinkle it over 1 cup blueberries, and stir them into the batter last.



Pecan Muffins.

Use 1/4 cup sugar. Add 1/2 cup chopped pecans to the batter. After filling the cups, sprinkle with sugar, cinnamon, and more chopped nuts.



Whole-Wheat Muffins.

Use 3/4 cup whole-wheat flour and 1 cup white flour.



Date or Raisin Muffins.

Add 1/2 cup chopped pitted dates or 1/3 cup raisins to the batter.



Bacon Muffins.

Add 3 strips bacon, fried crisp and crumbled, to the batter.

… Thank God I was making extra anyway. The replacement cinnamon rolls are done.
