Any Home Bakers Here?

Hey there. I don't usually post here but I need ideas. I'm baking for a local contest. I am thinking about making craquelin cream puffs. However, the food will be outside in 90 degrees. I need a filing that will hold up in the heat. Any ideas?

OK, try something called diplomat cream. It’s a cream that’s made by combining whipping cream and pastry cream. It can be reinforced with gelatin, so it can resist melting.

Today was a bread baking day. I made the following:

Two loaves white bread
Two loaves artisan style yeast bread
One Pullman loaf
One no knead loaf
Two loaves French bread

Needless to say, I am tired.

Baked Sunday afternoon, did not let the loaves over-proof this time:

I have a hard time splitting the dough evenly, so some loaves look regular, and some are ugly. They taste fine.

The only grocery that carries rye flour is Publix, across town and in an area I avoid as it's next to the Mall. So, I ordered the flour online :sigh:
