You can pick, wash, quarter and freeze tomatoes until you have time or enough quantity to can. Thats what I do when I get 2 or 3 at a time.

:thumbsup Great tip. Would never have thought about that. We usually have loads of tomatoes to can, but this was a horrible year for our veggies.

Oatmeal cookie

1 cup butter, softened

1 cup white sugar

1 cup packed brown sugar

2 eggs

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon salt

1 1/2 teaspoons ground cinnamon

3 cups quick cooking oats

Ingredients

1 1/4 c. brown sugar (divided)

3/4 c. granulated sugar (divided)

2 sticks unsalted butter, softened (plus more for cooking apples)

2 eggs

1 tsp. vanilla

1 1/4 c. all-purpose flour

1 3/4 c. rolled oats

1 tsp. baking powder

1/2 tsp. ground cinnamon

1/2 tsp. kosher salt

6 Granny Smith apples, peeled, cored and finely chopped

2 tsp. cornstarch

1/2 tsp. ground nutmeg

1/2 tsp. ground cinnamon

Caramel sauce, for serving

Directions

Preheat oven to 350 degrees F.

In a large mixing bowl, combine butter, 1/2 cup granulated sugar and 1 cup brown sugar. Beat with hand mixer until light and fluffy. Add eggs and vanilla and mix until evenly combined. Add flour, oats, baking powder, cinnamon and salt and stir until just combined.

Spray 2 regular sized muffin tins with cooking spray. Using a medium ice cream scoop, scoop dough into muffin tins, press down with a spoon to create cups. Bake for 15-20 minutes until the cookie cups are golden brown and set. (Don’t worry if the cookie cup centers rise!)

While the cookies are still warm, make the cups. Spray the bottom of a small shot glass with cooking spray and press the shot glass down into the center of each cookie to create cups. Let cool in pan for 15 minutes, then transfer to wire cooling racks.

Meanwhile, melt about 2 tablespoons butter in large nonstick skillet over medium-high heat until beginning to brown. Add apples and sauté until beginning to soften. Add the remaining sugars, nutmeg, cinnamon and cornstarch and cook until soft and caramelized.

Spoon the apple filling into the cups. Drizzle with caramel and serve warm or at room temperature.
 
I have Pastry dough resting in the fridge and brownies just out to the oven. I will bake an Apple pie this afternoon and then something to go along with a pot roast. Likely sourdough rolls
 
I have baked my brains out today baked the oatmeal apple they just need the caramel drizzled on banana bred next had enough for 2 loaves, also9 dinner rolls now rising did clean chickens this morning went back out to check for eggs BF's favorite EE laying on her side most the morning she was in a spot they do dirt baths so did not pay much attention first still there at 3 picked her up she did not struggle at all first set her down she fell over took from roost set her on the floor she did get her feet under her and walk but gently picked her back up putting her in favorite nest box.
 
glad your here also yes I actually had a bit oatmeal cookie dough left over so made large cookie placed apple in the center still have some left over.. think maybe minie pies tomorrow added to bread heck what's a bit more dough I do not need to let rise
