Any Home Bakers Here?

Cuz I am....I pickup up a pizza in town just waiting for the wife to get home from work to pop out in the oven...

Have you ever tried making your own? The dough is easy and you can fix it up with whatever toppings you want. We love pizza and the way we fix it, I figure we're saving about $25 every time we make it instead of buying it

Yah I do all the time...been a while since we had a pizza from town and I just happened to be in town a little while ago. So I picked one up. It was $11 for a large from Papa Murphy's take and bake. Pretty good..... Yeah I'll just sample from everyone else's menu while I wait.

When my boys were young those were the pizzas I'd get. It was convenient to stop and pick one up while running around taking them places. Then quick to fix up a hot one for dinner.

I have a feeling there will be a lot of things to sample over the next few weeks Phil, so you just help yourself to whatever looks good!
 
Oh! I was getting ready to make my specialty and I thought of ya'll; I HAVE to share the Maple Pumpkin Cheesecake recipe....


A neighbor brought a little tiny cheesecake over to me, oh, 10 years ago.... And brought back the recipe a week later and I've made it for Thanksgiving ever since!

It's a hybrid of pumpkin pie and cheesecake...with maple glaze; you know, for the people that hold up the whole buffet with indecision, "cheesecake or pie?" ;)

Maple Pumpkin Cheesecake

Ingredients:

1 1/4 C Graham cracker crumbs
1/4 C sugar
1/4 C butter
3 8 oz pkgs cream cheese, softened
1 14 oz can sweetened condensed milk
1 15 oz can of pumpkin (OR 1 pie pumpkin baked at 350 for 90 minutes, innards removed and flesh scooped from rind)
3 eggs
1 C maple syrup, divided (NOT pancake syrup, REAL maple syrup)
1 1/2 tsp ground cinnamon
1 tsp ground nutmeg
1 C whipping cream
1/2 C chopped pecans


Procedure:

Preheat oven to 300 degrees

In small bowl, combine cracker crumbs, butter, and sugar. Press firmly into bottom of 9 inch springform pan.

In large mixing bowl, beat softened cream cheese until fluffy. Gradually mix in condensed milk until smooth. Add pumpkin, eggs, 1/4 C syrup, cinnamon, and nutmeg. Mix well. Pour into springform pan.

Bake at 300 for 1 hour and 15 minutes, or until center is almost set. Cool on wire rack for 10 minutes. Carefully run a knife around edge if pan to loosen. Let cool for another hour. Refrigerate overnight.

Remove sides of pan. In a saucepan, combine remaining syrup and cream. Boil rapidly for 15-20 minutes until thickened, stirring occasionally. Stir in pecans. Cool and serve over cheesecake.


Hoard some for yourself for later, because it goes fast ;)

Is everyone busy in the kitchen today?

I'm going to get a pumpkin pie made up. DH just said not to bother with dinner rolls so that makes today easier. Our turkey is going to take some help defrosting. It's been in the extra fridge since Monday morning and is still mostly frozen.

@shortgrass your Maple Pumpkin Cheesecake looks delicious! Thanks for sharing the recipe. We love the taste of the real maple syrup so usually have that on hand (unless we've used it up on French toast, lol).
 
Thanks! I only make it once a year lol, because I would probably get diabetes if I made it more often ha-ha :D

I was up early thinking of making the cheesecake, so I had to come see what everyone else is making; maybe I can find some new ideas to spice up the old potatoes ;)

I'm never let down around here :)


Edit* lol I HAD to reiterate using REAL maple syrup, most pancake syrups have corn syrup in them...blech :p

Take a look at the Index on page 1 if you need some ideas. That sure has made finding things easier (and thanks again to @sumi and @sunflour ).

(I totally agree with you on the syrup...the real stuff is worth paying a little bit more for.)

Oh it definitely helps; it was an awesome undertaking for sure!


Much much better than scrolling through 3,000 posts and forgetting what I was looking for before I find it ;)
 
@NorthFLChickHere is the toffee recipe. I use a heaping cup of nuts chopped coarsely instead of three fourths of a cup. I make this and give it to people I would like to give something small to with their card
