We are making cinnamon ornaments. They are cooking now and let me tell you, my house smells amazing! I found the recipe on Pinterest and there were many like it, so I thought it would be a good one... I ended up being pretty frustrating and I had to make a lot of changes

First, let me tell you the recipe.
1 cup applesauce
1-1 1/4 cups cinnamon
1tsp clove (optional)

Sounded easy enough. Mix together, sprinkle cinnamon on a flat surface the same way you would for roiling pie dough. It said you may need to add more cinnamon. Well, after trying to roll the dough three times, having added more then three cups of cinnamon and having the dough still so sticky that I was unable to pick up the shape I cut out, I kind of was over the recipe. Obviously I wasn't going to be able to add enough cinnamon for this recipe to work, so I figured to start adding flour and salt because I've never had this problem with salt dough ornaments. I ended up adding about 1/4 cup of salt and 1/2-1 cup of flour before I was able to roll out the dough. It was still a little sticky, but it was firm enough that the daycare kids were able to make ornaments. So here is the recipe after I fixed it to make it doable.

Cinnamon Ornaments
1 cup applesauce
2 cups cinnamon (plus extra to sprinkle for rolling dough)
1tsp vanilla
1/2 tsp ginger
1/2 tsp nutmeg
1/2-1cup flour (add 1/4 cup at a time)
1/4- 1/2 cup salt (1/4 cup at a time)

Preheat oven to 200
Mix together all ingredients except salt and flour. Add salt and flour to dough 1/4 cup at a time until the dough is able to roll without sticking to rolling pin and shapes are able to pick up. To roll, sprinkle cinnamon on flat serface and some on dough (like you would for pie dough). Cut out dough with cookie cutter, place on baking sheet lined with parchment paper. Use a straw or pencil to make hole in ornaments for string to go through later. Place in over for 2hrs, turn ornaments half way through. When done, remove from oven, place on wire baking rack to cool. Once cooled, put string through hole and tie. Hang on tree or give as gifts.

So I changed it a good amount, but it works now and the kids were able to do it with me. We had fun and my house, like I said, smells absolutely amazing! I decided to add ginger, nutmeg and vanilla because I thought that would make them smell a little extra yummy. Some ornaments are done after 2 hrs, a few needed a little more time because they were a bit thicker.

Does anyone cook with whole meal flour? If you substitute it in a regular flour recipe do you have to adjust the liquid? Is there a rule of thumb for how much extra to add?

I don't go by the amount of flour in the recipe--we go by cups and not weight so the moisture content of the flour will change the number of cups.

The trick I use is to add most of the whole grain flour to the water and let it sit for about 20 minutes. The grain will absorb that extra amount of water so that the dough will not be too dry. Then start kneading and add flour necessary to make the dough.

I hope that makes sense.

Thank you! Yes that makes sense! And explains why sometimes things seem dry and sometimes fine. I often weigh in recipes but not always.

I'm trying to make whole meal sourdough at the moment but it's quite dry. I added some extra water at the end but then it went sticky. Shall wait and see how it rises I guess.

My sister wants to do the whole grain version so I'll let her know to soak it first!
