Okay, I was lazy with pizza for lunch, but I did make blackberry muffins this morning! Here is the recipe (finally naptime!!!!!!![]()

Sour cream Blueberry Muffins
(I used blackberries this time and I use plain yogurt instead of sour cream)
2 cups flour
1Tbs baking powder
1/2 tsp baking soda
2 cups fresh or frozen blueberries (or blackberries)
2 eggs slightly beaten
1 cup sour cream (or plain yogurt)
1 cup sugar
6Tbs butter, melted, cooked slightly
1Tbs sugar for sprinkling on top
Preheat oven to 350. Grease muffin pans.
Combine flour, baking powder and baking soda in medium bowl. Mix well then add berries.
Combine remaining ingredients except 1Tbs sugar in another medium bowl and mix well.
Add egg mixture to flour mixture. Mix until just moistened. Fill muffin cups and sprinkle tops with the 1Tbs of sugar that's set aside.
Bake 30-35 minutes or until toothpick inserted in center will come out clean. Cool in pan 5 minutes before removing. Makes 12 muffins.
**if you are doing mini muffins, bake 15minutes. Makes around 30 mini muffins***
Our AC wasn't working properly so it was in the upper 80's in the house so haven't been doing any baking. Got the AC fixed so maybe now I can get some done.
