I freeze about 15 quarts of shredded zucchini a year so I can make bread whenever I want. I have never blanched it. I simply wash it in hot water, shred it into bags and pop it in the freezer. When I take it out I let it thaw completely, wring out the water (juice) and then add to my recipes.

Works in almost anything. Zucchini Bread, Italian Stuffed Shells, Spaghetti, (no name for this but...) Add Shredded zucchini, shredded summer squash and hashbrowns on a cookie sheet prinkle with garlic salt, onion powder and Parmesan bake at 350 until crispy.
 
I have the "cheez-it's" crackers in the oven! I used 1 cup cheddar and 1 cup mozzarella because I had some of both left over from making pizza this weekend and figured I'd use the mozzarella up instead of grating more cheddar. I also threw in a little parmesan because I buy the big containers of it from Costco and figured why not

They are yummy. I didn't roll them out thin enough though. I thought they were, but next time I'll have to make sure they are super thin!

That was my mistake the first time I made them too.
