Any Home Bakers Here?

Well, my other picture finally arrived on my computer. Here's what the dutch oven bread looked like on the inside. Think more water on the rye next time. what do you think?

I think it looks good Bob! Rye bread is one of my favorites :D
 
Freezin sourdough? Do you prefer to freeze it after it has risen and before you bake it? Before it rises and either in roll form or loaf shaped? Or after you have baked it already? If after it has risen but before bakin... just thaw and pop it in oven? Or just from freezer to oven no thaw? If before risen... does it seem to take way longer to rise that way? Would freezin on a cookie sheet unrisen and put in a ziplock work do ya think? So i can just pull out ever how many i want at a time? I am thinkin of makin some to freeze to sell at christmas since we wont eat all that my starter wants me to make right now. But space in my freezer is soon to become sparse cause we are gettin cow in a few weeks. I just hate to throw out starter.
 
I meant do you pre- cook your potatoes for the hash browns?

Sometimes I microwave them for a couple of minutes.

You do not need to though. If you pre cook them you do not need to use a lid to cover them.

I suspect the trick is to use cast iron. Cast iron changes the flavor of the potatoes

Yes, try the cookie sheet and then ziplock bag. I have not done this but should work. You could test a loaf and see how it works for you.
 
Debby, YOU ARE SO RIGHT....IT WAS a surprise....the Artisan Bread......through the steps and more steps...looks GREAT.

It just came out of the oven...and I was not up to the rim when I put it in...and as it cooked...it did rise. Looks good...cannot slice
...needs to cool.

I think YEAST BAKING is the most forgiving....the temp of the water and the amount of flour are two keys. ha ha Aria
