Any Home Bakers Here?

Cream cheese, scrambled eggs and herbs--add a pinch of nutmeg and a bit of onion powder. Salt of course.

A second one: diced fried onion, diced peppers and mushrooms. A bit of basil, black pepper and salt

A third one: creamcheese and cinnamon sugar!

Last night I made a filling out of what I had on hand.

I fried diced onion in palm oil, mixed it together with cream cheese, shredded Dubliner cheese, diced pimento peppers (garden grown) that I've had stored in vinegar in ball jars, pimento vinegar, multi colored pepper mix, Herbamare, dash of celery salt, dash of lovage, and I think that's it.

It is not appropiate for popovers, but for crackers! Today I'm going to make crackers out of Einkorn flour.

I made cultured butter last night. I used cream from walmart and cyrstal buttermilk as the starter. The cream cultured with 3 tablespoons of buttermilk in the proofer set at 76 degrees F for 12 hours. I then whipped the cream in the kitchenaid mixer.

The milk that was left after the butter formed is real buttermilk! I will cook something with it to see how it works. The butter was rinsed 4 times and I added 1\8 tsp of salt to it.

I had some of the cultured butter on toast this morning. I liked it

I love real cultured buttermilk. I used to put it in lasagna, with wonderful results!

Now I have another one to try!
I am going to make cultured butter tomorrow morning(takes 12 hours to cultivate). That gives me real buttermilk!

I can't wait to see how it tuns out
I make butter really easily... just need arms that can endure shaking for a long time.... put whipping cream in a mason jar and shake... and shake... and shake... pour off buttermilk before adding salt.

I've spent the past 4 hours catching up on posts... phew... now I'm REALLY hungry

Bagels - try boiling in honey water. I used to work in a bagel shop that made Montreal style... in my opinion New York style is just bread baked in a ring in comparison
 
We used to pick up raw milk (grass fed too) at one of the farmer's markets and let it sit for a day then we would collect the cream off the top and make butter from it. We just stuck it in the mixer bowl of the ninja and ran it for a while. It was always great and worked wonderful! We've since had to switch to almond milk since we've found that our son has stomach problems linked to dairy. The raw milk was better, but he still had issues.

The butter I made was cultured @76 degrees for 12 hours before I made the butter.

You can make butter from Goats milk. Can you son drink Goats milk?
