We have not tried lactaid yet but have thought about it. Does it taste like regular milk? He misses the taste of real cow's milk.

Yep, tastes just like regular cow milk (I drink it too since it's in the house)! Give it a try and see what your DS thinks of it.

There is a farmer in Wisconsin that is building his herd for low lactose milk. I saw an Ag show about it. I think the dairy is non-GMO, grass-fed and organically raised but not certified organic at the time of the show. I bet that milk is pretty expensive, although if you can't tolerate lactose it may be worth it.​

There is already A2 milk. Lots of places sell it and it works for many too. It is not as expensive as organic milk but pretty expensive

How do you reduce the amount of lactose a cow produces? Genetic alteration? Or is it just created by what a cow eats?

Some cows just naturally produce less lactose in their milk, just like some produce more milkfat or cream than others. No genetic alteration involved - just selective breeding. This farmer tests the milk from each cow for lactose levels and if the milk has too much lactose, they sell the cow to remove it from the herd.

The A2 milk is from cows that produce a different lactose protein. Most people can digest that protein. You can look it up but it does seem to work

It's snowing this morning so decided to stay inside and try out a new recipe for soft Pretzel Rolls. The dough is raising right now. I'll let you know the results later.

We had pretzels last night from my last batch of them. They were frozen so I thawed a bit in the microwave and then reheated them in the toaster oven. A bit of melted cultured butter and a bit of grinder sea salt on top. they were like just baked!

Most Jersey and Brown Swiss cows produce A2 milk. If you can get it, goat milk is superior over A2 cow milk.
