I would lower the temperature to 375. Check to see if it is finished baking after 25 minutes. It will likely take closer to 30 minutes. I use a thermometer with a baking probe, the type used to test meat. When the internal temperature is between 195 and 205 bread is finished baking. You can also use the tap on the bottom method. It will sound hollow when thumped when finished.

Thank you so much for your help as always :)
I have an instant read thermometer that I can use, I'll give it a try.

Hey guys, I have a question about baking time for bread. Our favorite bread recipe makes two 1 pound loaves. It's not big enough, so I'm thinking about trying it as one 2 pounder. It bakes at 400* for 20ish minutes. How long should I extend baking time for a 2 lb loaf?

I had to, GASP, buy a loaf of bread at the grocery store. Hubs was very vocal...it's not good Kim, I can't believe we ate this junk, might as well be cardboard, let's make sure your schedule is clear, maybe make a few loaves for the freezer... can you say SPOILED?

Like Ron said, I rely on a thermometer to check for doneness.

I'm trying out a new brioche bun recipe this morning. I'll let you all know how/if it turns out :)

They're out of the oven and looking good! I can't slice one open until they cool off but here are some photos in the meantime:

Dough is mixed and doing it's 1st rise...

Measuring out the dough so I can evenly divide it into rolls...(this is tacky stuff!)

8 dough balls ready to do their 2nd rise...

After their 2nd rise, brushed an egg wash over them and into the oven...

Yay, all done! Just have to cool and eat!
