Peach Berry Cobbler

This one was made with fresh peaches and frozen black raspberries. The black raspberries were partially thawed before mixing with the syrup and peaches. It did not last very long.

That wouldn't have lasted long at my house either. It looks great!

I got in serious trouble last year when I found frozen black raspberries at Albertson's. I had not had this in years. I ate the whole thing in one evening and ended up with a serious sugar overdose. Now I only make it when there is someone here to protect me from myself and help eat it. Fortunately my brother was visiting from Arizona and ate most of it for me.

It was even better than it looks.

What the hay Jared how did that al transpire

Well, me and my brother were talking. After we figured out that Thanksgiving and Christmas dinners were already planned, I was thinking of when I can have the goose. Immediately, me and my brother said, both at the same time, " who says we can't celebrate Halloween with a holiday dinner!"

It's technically a holiday, right? So, we're having a holiday dinner!

Problem solved!

I can see how that would be too much temptation to have all to your own. Nice your brother came for a visit and was able to lend a hand (and a spoon :gig )!

New cookie recipe!

Almond Cookies.JPG

Almond Cookies
Cookie Ingredients:
1 Cup unsalted butter, soft but still chill
3/4 Cup sugar
1 teaspoon almond extract
2 Cups AP flour
1/2 teaspoon baking powder
1/4 teaspoon salt
sliced almonds

Glaze Ingredients:
1/2 Cup powdered sugar
1 teaspoon almond extract
1 Tablespoon water

1. Preheat oven to 400*. In a bowl, cream the butter, sugar and almond extract. In a separate bowl, mix the flour, baking powder and salt. Add the flour mixture to the creamed mixture 2 Tablespoons at a time to be sure the ingredients are completely combined.
2. Roll into small balls and flatten slightly. They should look like thick checkers. Bake for 7 minutes on a parchment lined cookie sheet (the cookies will not look baked). Remove to cooling rack and place sliced almonds on top of each cookie.
3. For the glaze, combine the ingredients and drizzle on top of the almonds and cookies.

NOTE: The recipe said it would make 24 cookies. Apparently I made mine pretty small because I ended up with 70
