Any Home Bakers Here?

Hot cider is one of my favorite drinks when the cold weather hits. You have your T-day turkey all ready? You're my hero :lol: I usually wait until the last minute, dash to the store to see what's left and then try to defrost it so it's ready in time for T-day dinner!

I'd love to see your recipe for the pecan pie bars, if you wouldn't mind sharing.
:lau I do that too! I guess it's time to plan a menu. I have one friend who has her menu planned out now. I thought she was so ahead of the game, then my dental assistant said she doesn't do thanksgiving because they don't like turkey. what??? Anyway, she is already decorated for Christmas!!! I'd be tired of all the decor by the time Christmas gets here if I did that. But, I will decorate shortly after T-day.:ya
 
You can take it out of the freezer, remove it from the container and cut/saw it into manageable portions, repackage and put back into the freezer until wanted.

If you don't have a meat saw to cur it with, you can wash a hacksaw blade and use the hacksaw to saw it into portions.
That is such a clever idea!
 
I have made the mistake of freezing a huge block of leftovers. I am beginning to believe that freezing leftovers is a big mistake at our place, DH never wants to eat them for supper anyway. And I eventually forget they are there, and end up throwing it out after a couple of years.
I freeze mine in individual servings. They make great lunches, and even dinner for me when DH is working out of town.
 
How about cucumber/tomato salad and dirty rice?

The jerked chicken was last night's dinner. I had to work with what I have at home (hate going to the grocery store!) so we had sour cream garlic mashed potatoes and broccoli.

I think tonight it will be a "clean out the fridge" dinner. Leftovers are building up.

Lol - sounds like what I usually do. We weren't planning on buying a turkey today, but came across them for .78 cents a pound at Walmart. Figured that's about the lowest we would find them priced at, so bought the biggest one we could find - 21# (love those left-over turkey sandwiches)!
Sure, I'd be happy to share the pecan pie bar recipe. I found it many years ago in a Christmas cookbook, and have made them for family, friends, and potluck-type dinners. They always go over very well, and my family requests (rather DEMANDS) that I make them every year.

PECAN PIE BARS

Bar Cookie Crust -
2 C. flour
1/2 C. cold butter, cut into pieces
1/3 C. sugar
1/4 tea. salt

Preheat oven to 350 degrees. Spray a 9" x 13" pan with cooking oil spray. In large bowl with mixer at medium speed, beat flour, butter, sugar and salt until mixture resembles coarse crumbs (I think a food processor works better). Press firmly into bottom and 1/4" up sides of prepared pan. Bake 15 min. or until golden brown. Remove from oven.

Filling -
2 eggs
3/4 C. light or dark corn syrup
3/4 C. sugar
2 Tbsp. butter, melted
1 tea. vanilla
1 + 1/4 C. pecans, coarsely chopped

While cookie crust is baking, beat eggs, corn syrup, sugar, butter and vanilla in large bowl until well blended. Stir in pecans. Pour over hot crust once it's removed from oven, and spread evenly. Bake 20 min. or until filling is firm around the edges, but only slightly firm in the center (don't wait till it's completely firm!). Cool completely on wire rack, then cut into bars.
