Are you totally beat now Jared? You can sleep all night and half of tomorrow :D Nice that you were able to rescue the duck. Not a convenient time but a morale booster regardless.
It will take longer to figure out but when you get to the point that the bread is good, then you will know how the dough will feel.

My Mom was my mentor and that was a long time ago! It is great when Family traditions like baking is passed down. Sadly we do not get that so much anymore

Maybe I should go to one of the King Arthur classes when they get going again. It's only a couple of hours away in Norwich.

The classes might be a good way to learn some new things (and then you can pass them on to us)! It can be helpful to have a live person right there next to you.
 
Completely beat.

Felt good to rescue the duck also. Poor little guy had a scar on his side, and lost the ability to use one of his legs. I took him to the animals in distress Association, and they are taking care of him.

I probably won't bake much until I get everything unpacked.

Might be a good idea get a few things taken care of

Bruce, I took a class on-line from Craftsy (guess they are called blueprint now) taught by Peter Reinhart, Artisan Bread Making. It felt like it took me forever to get my dough to look like his in the video, but once I got there I understood the look and feel I was striving for.

You have to get a feel for it by doing it. Over and over and over again.
