Any Home Bakers Here?

Thank goodness.....I do not have sleep-less nights too often. If and when I do....I get up warm milk, honey and 2 graham crackers....read little...and then back to bed...and I do fall asleep. NEVER try to accomplish chores...does not work. A Doctor friend told me this...MANY YEARS AGO.

A banana helps me, apparently there's something in this fruit that helps to induce sleep :)
 
Well crud, the espresso powder will be here today but my cocoa has been delayed a week. I’ll make scones with regular cocoa tomorrow and we’ll have to taste test some with the Dutch cocoa after it gets here. Oh darn!

@ronott1 What is the rule of thumb for using sourdough starter, freshly fed? Or when the activity is at its peak and it hasn’t deflated yet? I thought at the peak of activity. If I don’t want to add yeast to my dough is that still true?


I don’t have them often these days but just couldn’t fall asleep and kept thinking about the bread. I won’t do that again for sure. At least it didn’t make a mess in the oven so there’s a silver lining.

Thank you! This recipe is really good for grilled cheeses. I am still trying to perfect my technique and recipe, and I am sure that I will be for the rest of my life.
Good to know. It's been years since I've attempted to bake, I'm not saying I'm particularly good at this but I'm really enjoying both the experience and the taste.

It's really good knowing what we are a actually eating, as we can't know when we buy ready made food of any kind.

You put it in a CLEAN JAR....keep on your counter NOT in cupboard...it needs to get the wild yeast in the air...and you can see if it rises to the top of the jar. After it rises and falls...you know it is alive and well...Then you can put it in the refrigerator. Aria

Marie, I do not use the "conversation" on this thread...not sure it works for me. Happy to help. Once you get a strong healthy starter it stays with you. And I find keeping a smaller amount is best. I recently started a second jar to keep it smaller and have when I need MORE in my recipe.
But 2 tablespoons of the strong healthy starter can start up a fresh new starter. I learned this from Elly, a gal in Australia. She uses a very small jar....takes all but 2 tablespoons and uses it...and then adds what she takes out to the very small jar ...back in the refrigerator for next time to use and repeats it. It does work for her and seems very simple. Aria
