Made three loaves of sourdough to go with dinner. I’m happy with the crumb. Nice and light. Best loaves yet!

240g sourdough starter (1:1 flour to water by weight)
625g bread flour
340g lukewarm water
2.5 tsp salt
1 tsp citric acid (sour salt)

It’s a King Arthur flour recipe with 20g more flour. Machine knead for 3-4 minutes. Let set in bowl for 30-45 minutes. Machine knead again. Roll onto oiled surface, stretch and fold. Form into desired loaf. Raise until doubled, bake at 425 until internal temp of 195-200

You’re welcome. I’ve used hundreds of recipes over the last ten years until I finally tried the King Arthur recipe. Then just tweaked it until I got results I like. King Arthur’s site has much more drawn out directions that result in tough bread.

I have found simple is most times best.

Jared, LOOKS delicious. I had a knock at my front door....A neighbor
came with a Large Canvas Bag ...filled with all individual plastic containers with Turkey and all the trimmings. They were new, different
colors and sizes each with part of the WHOLE TURKEY DINNER. AND
enough for Friday, Saturday, Sunday and the rest of the week. I DO HAVE wonderful neighbors. They are the family that does my weekly
grocery shopping weekly and I make Bread for them. Super gift. Aria

This is the way I was brought up. I'm glad to see that this type of kindness still exists.

When we had new neighbors move in, we always baked or cooked a dish to say WELCOME.

You just don't see that done today.

You musthave some very caring and nice neighbors.

Another recipe winner... I haven't cooked much Greek and never had training in their cooking techniques so this recipe is good as it sets forth cook time for different stages. It was excellent.

I didn't add any salt. I pan fried the pork chops with garlic powder and garlic powder. Served it up with a side of salad. Pita bread would be nice too.
Thanks for the recipe!

MarkJr, I agree. The long, complicated procedures....NOT WORTH IT...
to me. Thanks again, looking forward to trying the recipe. I enjoy new
recipes. Regards, Aria
