Sourdough Honey Oat Bread
1 cup Sourdough Starter
2 3/4 cups warm water
2-1/2 teaspoons salt
4 tablespoons honey 4 tablespoons oil
3 cups whole wheat flour
2 cups of oats
6 cups bread flour

Mix starter, water, oil, salt, honey until well combined
Add flours and oats and mix until it comes
together and there's no dry flour left.
Let sit 30 min to autolyze and for the whole grains to soak up the water
After 30 min knead about 20 times until it comes together.
Put the bowl in a warm place covered to rise until about double in size.
After your first rise it is time to shape. Dump dough on floured surface and divide into loaves
(3-4 depending on size) I made two 9 x 5 and one
8 1/2 x 4 1/2. Press dough roughly a 6 x 8 rectangle, fold like a letter with long sides in, flip
seam side down and let sit for 10 minutes. Grease
your tins. Dough into tins to rise in a warm place.
1-12 to 2 hours or top of tins (about 1-1/2 times
the original size. Oven 425 degrees 25-30 minutes. Golden Brown (done 190-200F)
 
Had a go at Welsh cakes, some without fruit for the OH.
They look like what we call English muffins.

Went to my fishing spot one last time before I move. Something unbelievable happened. While reeling in a trout, a GIANT largemouth Bass showed up and tried to take it!
You very nearly had trout stuffed bass for dinner!

I hope the moving is going well.
