Any Home Bakers Here?

Except eggs are few and far between right now. The girls are either molting, or haven't started.
Mine too. No eggs the last 2 days but Aurora laid one this morning. That girl needs to give herself a rest, she's been laying for nearly 2 years!
 
I love making ricotta and mozzarella! I haven't done it in a while.

Y'all are so lucky you get cool weather! It's supposed to be high 80s this week but dip to 70s next week. I will definitely be overcompensating and pulling out my sweaters.

Might make some sandwich bread today, I have a pregnant friend who's dealing with nasty morning sickness and can only stomach my bread and crackers :lau

Does anyone have tips for making ice cream cakes? My birthday is on Wednesday and I thought, why not try making an ice cream cake? I just went out and got a quart of Baskin Robbins mint chocolate chip (the best) ice cream and I was going to just put it in a pan with some yellow cake, but I wanted to see if anyone had any cautions before I make a plan.

In Baked Alaska you remove part of the cake leaving at least an inch of cake around the sides and replace it with the ice cream cut in slabs. The key is to top with meringue and make sure the ice cream is sealed in before baking the meringue. If there isn't a good seal the ice cream will melt. Serve immediately.

The ice cream is sealed in only with the meringue? Or is it covered with another layer of cake? How long do you leave it in the oven, and at what temp, to brown the meringue?

(It seems safer to brown the meringue with a kitchen torch, actually.)

Just the meringue seals it in. It is only in the oven long enough to brown the meringue since the cake was already baked.
