By the way, I finally found the sheet music I’ve been trying to find for months. It’s called the “little“ fugue in G minor by Bach. BWV 578. It’s for organ.

What will you play this on? Do you play the organ too?? You have so many talents!

My favorite tool for proofing is my instapot. I set my bowl of dough in top on colder days and set it to Yogurt for either 30 min and up to 2 hours depending on how cold the house is. It's never failed me!

Can you give me a step-by-step for this? I absolutely love my IP, and I had never thought of using it for a proofer. When I make yogurt, I do it in quart jars wrapped in towels, so I don't have any experience with the yogurt functions on the IP.

I understood that.

I was trying to give some insight related to the mold.

And a very good thought. I'm sure the rooms where commercial cheese is made are exceptionally clean, likely no stray mold to get into the product.

Ooooh, I should make that this week while DD2 is still house sitting. She wouldn't touch it but DW would love it.

I have a huge stock pot full of homemade beef stock going and right now the house smells heavenly!!

I did chicken/turkey stock yesterday. Gotta use the carcasses you have, right?
