Any Home Bakers Here?

Good morning bakers! No baking here today, it’s going to be way too hot. The sourdough loaf I baked the other day turned out quite sour! I had forgotten to do the stretch and folds for several hours then after I shaped it I forgot it in the fridge overnight. I liked the flavor but I think it overproofed and I just couldn’t get a good surface tension on it so it didn’t have much oven spring.
