I love all things gingerbread:love. Would you be willing to share recipe? :fl
Most certainly can. We usually triple the recipe amounts to make multiple cakes for family members to take home as well.
This solo recipe will make a bread loaf size cake. Can be made in whatever pans you have available.
Also note,,,,, the spices can also be adjusted for amounts depending on your taste. The cocoa can be left out, or lessened and cake will be slightly tanned. I prefer the darker version of this cake. (well tanned :frow )
This recipe is also unusual that it uses Yeast and a little of Baking soda. DOES NOT NEED A RISE, just put into oven and bake as if it was baking powder, baking soda raised.

Gingerbread cake.

Ingredients.
2 Cups Flour
1 Cup sugar
1 Cup Honey
4 eggs
4 TBS Sour cream
4 TBS Corn oil (canola, or grapeseed oil works equally.)
1 Package of dry yeast. (proof in ½ cup
warm water and 1 TSP sugar.)
1TSP Baking soda
Spices;
½ TSP Allspice
½ TSP Nutmeg
½ TSP Ground cloves
½ TSP Ginger
1 TSP Cinnamon
1½ TSP Cocoa

Procedure.
Separate eggs. Beat whites. Mix yolks with sugar.
Combine rest of ingredients, adding flour last.
Mix well. The mixture will be loose, not stiff.

Pour into baking pan lined with parchment.
Much easier to remove out of pan.
Have pan large enough so raw dough only fills
half way up. (cake will rise about that much when baked.

Bake @ 350°F for 60 minutes. Toothpick check for done.

Dang, being GF is no fun! But I sure do enjoy vicariously "tasting in my head" when you guys post recipes like this!
I have a friend who is GF. I wanted to make her a loaf of GF bread so I tested this recipe. It was such a hit in my household that I've made it several times this month (even though we aren't GF). It calls for 4 eggs -- so even better for those of us with our own supply, lol.
It looks like there are lots of poppy seeds in it but they are actually chia seeds.

Because it is eggy, it makes a great breakfast bread too.

There are numerous recipes, and they all differ in some ingredients. This is a recipe that my mom transitioned to after finding it.:frow (many years ago). Prior to that her ginger bread cake bake too several days work. :(

Happy Novogens suggested using Almond flour,, I was thinking of you possibly making same cake using rice flour. EXPERIMENT,,,, and see your results. All the rest of ingredients you are fine with..(to my understanding)

Oh, I'm sorry. I'm just seeing your questions. I bought a Harvest Right, medium freeze dryer. It was $3069. But, is currently on sale for $2695. But then you need your surface, bags, jars, oxygen absorbers, tray liners, dividers, stackers... it's a little like starting out with chickens! 😁
It is a little loud, but because our garage was too warm in the summer, we brought it into the kitchen. Wish we had a basement. I would think a 40° room should work. I do like the heat it gives off when running it in the winter months.
But, I'm no expert. Its all still pretty new to me. Look into the group "Retired at 40" on MeWe or Facebook. Theres also a YouTube channel, by the same name. Very helpful folks, there!
Eggs that have been pre-frozen will freeze dry in about 24 hours. Just like baking bread, you need to take your environmental conditions into account. A medium freeze dryer has 4 trays and you can fit 15 large eggs per tray.
 
I made a yummy vegetable soup and an even better potato soup yesterday and today, to share with a very good friend who is down with Covid. Not quite as much fun as baking, but still satisfying and useful!
Soup is my specialty. You're a good friend to do that for your sick friend. ♡ Hope she is feeling better.

I made roasted ham bone broth yesterday. Tomorrow, I'll make ham and bean, and ham and split pea soups, and freeze dry them.
