Any Home Bakers Here?

Me, @ronott1 and a few others do.
A lot of us make sd bread, I make sd dog treats, someone makes sd crackers and pancakes, and I think Penny and I make sd pizza and English muffins on occasion.
So, yeah. We bake with sd.
We all do love making Sourdough
Cool! I kinda need some tips, when I try making SD bread and focaccia sometimes it doesn’t cook right the way through so the outsides cooked but the inside isn’t. Does anyone know how I can stop that?

I'm just starting to bake with sourdough so I can't help with that question but will follow along to learn. I have buttermilk sourdough pancake batter waiting to be cooked this morning. I'm looking at a couple of sourdough honey wheat sandwich bread recipes trying to decide which to try.

The pancakes were great. I had let the batter set on the counter last night for a couple of hours before putting it in the refrigerator and pulled it out for a couple of hours before cooking them this morning. Usually the batter gets no counter time before going in the fridge. I have the bread dough mixed up and hopefully it goes well.

Are you adding steam in the oven (a pan of water on a lower rack)? It also could be a hydration issue. In your case, your starter might be too thin. Bubbles in the jar are fun, buuuut, when you add the starter to the recipe, add less liquid in the recipe, or a tad more flour.

Nope! Yes my starter could be too thin! I’ll have a go and see if it works. Thank you so much. What are peoples go to sourdough bread recipes? Trying to find one that works, I need the overnight fermentation time to be longer than 12 hrs so it doesn’t over ferment or short enough that I can do it during the day.
