These sound really good will be making them in the near future. Pa has been begging for cookies.I intend to make these tomorrow. I swear I’ve made them before.
I won’t be doing vegan though. Butter tastes better.
Vegan Pumpkin Molasses Cookies
½ c coconut oil (solid)
½ c white sugar
½ c brown sugar
½ c pumpkin
¼ c molasses
2 tsp vanilla
2 ¼ c flour
½ tsp clove
½ tsp ginger
1 ½ tsp cinnamon
½ tsp salt
½ tsp baking soda
In a large bowl, beat all wet ingredients together.
In a separate bowl, whisk together dry ingredients.
Add dry ingredients to wet, and mix until just combined.
Chill dough for at least an hour. After dough is chilled, preheat oven to 350F.
Pour some sugar into a bowl. Form cookies into balls, and roll each cookie in the sugar.
Place on cookie sheet, and bake for approx. 15mins. Allow cookies to cool on cookie sheet for a bit before removing.
