Any Home Bakers Here?

I baked and decorated (gluten free) sugar cookies with royal icing for the first time ever! It took eight hours. 🥲 They taste great! Hubby and I enjoyed the two wonky ones, and the other 24 are going to church. Though... I might hold back four of those so that we can actually enjoy those eight hours of work. 😂

Wow! Those are beautiful. They look better than anything you can buy in the stores.
 
Good morning all.

I'm trying out a new sourdough recipe today. It's a cinnamon roll sourdough focaccia. Our golf club has what they call Hawktoberfest, where the football fans watch the Seahawks play. I go for the fellowship and food. We have a soup and bread competition. Last year I made my cheddar jalapeño sourdough bread, per my husband's request and I won the bread portion. He asked me to make something with cinnamon this year, so we found a couple of recipes to try.

I'll share how it turns out.

My levain looks strong and ready to go. I've never used a levain before, but have wanted to try it. This is my homemade controlled temp starter setup. Nothing fancy, but it does a great job. I always set it at 78°. I have a countertop oven with a proof setting for the bulk ferment. That's will be at 80°, I love having the controlled temp, takes a lot of the guesswork out.

Thank you for clarifying. To be honest, I am a little paranoid. I guess it comes with ADHD. I guess I could try pasteurizing the eggs before I use them, if that’s even possible.

Even then, I don’t even know if that’s necessary or not.
I've had cocktails with raw egg white. No issues. I assume you have chickens. Use nice fresh eggs, wash them first, to get rid of any bacteria on the shells. The eggs become contaminated if they have any cracks that allow the bacteria to get inside.
 
Hi, I do not do any baking but my wife does. She is a good baker and I have the tummy to prove it. LOL.

The fresh eggs from the hens = superior baking. Love baking but have to cut back because we are empty nesters no kids at home to help eat these treats. We might end up as round as we are tall if I keep baking 😆
