This is the Special Occasion macaroni and cheese recipe from Deep South Dish. It makes a large batch.
My family likes this recipe better than Mamaw’s recipe.
Recipes like this make me really, really wish I didn't have to be GF! Yes, I know there is GF pasta. And yes, I know that it is not anywhere close to real pasta. :hit

Sally, you are right about the GF pasta. My brother has to avoid gluten, as well.
I’ve tried making GF macaroni and cheese with the corn and quinoa noodles. It’s just not the same. 🙁
 
Thanks for the Northern lights photos! We had dense cloud cover, so we couldn't have seen it anyway.
Later on the cloud cover to the north was too heavy but I got images from the east, west and south.

You could substitute cooked white rice and boiled broccoli florets and have an extremely cheesy rice and broccoli casserole.
But, it would not be holiday macaroni-and-cheese.

You could try making it with the corn and quinoa noodles. Just keep everything else the same.
 
The Armenian exchange student made this for us. It’s called Dolma.

We go to a Greek church, so we get Dolma all the time at holiday gatherings! What kind of filling did it have?
Sorry to hear it made you sick afterwards. It's not my favorite food, either. I much prefer putting young wild grape leaves on sandwiches as a kale or lettuce substitute. It's actually healthier than kale!

My sister makes an AMAZING shells n cheese, and since I went GF she started making it GF for me. She used some sort of rice flour blend pasta shells, and it's actually quite similar to the glutinous version, which I got to enjoy a few times. I think the brand of pasta shells might have been Jovial, from Walmart.
