Any Home Bakers Here?

Ahh, I think thats what I have been missing. I did the overnight proof and all the folding and window, cast iron to bake on, steam pan ect, but I didnt do the final rise in the fridge! I bet that's why it hasn't been right.
I don’t even bother with a stream pan - I just pop it into a Dutch oven.
 
Are you prepared for a power outage? They said on the news that 1/2" of ice can weigh 500 pounds on a power line. 😬
We don't have an auxillary source of heat. In the 20 years we've lived in this house we've only had one power outage more than a couple hours, and it was about 12 hours during a hurricane.

As I see it, there's no sense in spending money on a once in 20 years (or more) event. So I don't have a gas or kerosene heater.

Our powerlines are buried, too.

We do not have many power outages here in Woodland CA too. Our wires are buried but we have had two 10 hour outages due to transformer failures over the past 6 months. The transformers are in vaults, so buried too so it takes some excavation to replace them.

The one last week was from 8pm to the next morning. It did get cold but the Sacramento valley is not a cold place! The temp was 60f in the house.
