I'd like to make some blueberry muffins for my grandson. The recipe calls for sugar, but I'd like to substitute honey. Can anyone tell me what amount of honey I should use, in place of the sugar?

I would use 1/3 C, you may want to remove a 1/4 c yogurt though, to help with the extra moisture.

@jnicholes, what is the texture of the Turkish Delight? The recipe was nicely specific on cooking the syrup.

Very difficult to describe the texture. I would say like gelatin that melts in your mouth.

If I ever see Turkish Delight in a store or restaurant, I will have to get some. Not likely to be as good as homemade, but I'm really curious now.
