How crazy! I also bottles on Thursday usually! I do every week though, a gallon and a half a week, but I have just started a seperate ferment to be ready on Monday/Tuesday, we are usually out by Wednesday even with careful rationing!I bottle every other Thursday, and brew the next day. I honestly milk 1 all day if I open one. I do check my alcohol levels though, all under 2% (usually closer to 1%) so I'm not worried. For me, that's in the afternoon, every day. Sometimes one in the morning too.![]()

Nice, I swap out different juices, but the standing favorite is strawberry kiwi concentrate. I started with a bottle of GT lol. It took me 6 months to get a good scout and get it used to green tea and raw honey like it wanted! I started with GT Dave's non-alcoholic to make my own scoby.
I bottle Thursday with 1/4 cup of tart cherry juice per bottle, and let the bottles sit at room temp until Monday. Then they go to the fridge. They get good and fizzy!
