I’m looking at a sourdough recipe, but something is confusing me.

Why does it call for sourdough starter AND instant yeast? Doesn’t that destroy the purpose of sourdough starter?

As you can probably tell, I’m looking for a rolls recipe that uses sourdough starter.

As you can probably tell, I’m looking for a rolls recipe that uses sourdough starter.
To make sourdough rolls, use your favorite sourdough recipe, form into rolls and bake for a shorter period of time.

A lot of recipes call for the addition of instant yeast with the sourdough.

"Using sourdough alongside commercial yeast makes it a bit more predictable and easy to work with. The commercial yeast will guarantee you get some good yeast activity and a predictable rise. The sourdough might have some unpredictable effects, but they're balanced out by the commercial yeast."

Sourdough starter will still ferment the flour even if you add some yeast. Depending on the recipe and the amount of starter used, you will still get sour flavor too.

You can ignore the yeast if you have good\mature starter. The stages can take longer, sometimes by twice as long.

I went off this recipe for an idea, but I added milk to bring the dough together because it was super dry. I also added baking powder and used vanilla instead of almond extract. I cooked mine at 350 for 20ish minutes? Sorry I don't always follow recipes 🤓

Dandelion Cookies

Ingredients​

  • 1 ½ cups all purpose flour
  • ½ cup powdered sugar icing sugar
  • ¾ teaspoons almond extract
  • ½ cup room temperature salted butter
  • 1 cup of dandelion petals

Instructions​

  • Preheat oven to 300 degrees F.
  • Wash the flowers gently in cold water and dry on paper towels. This helps to get rid of the pesky little bugs that sometimes hide around the base of the flower cluster.
  • Cream butter and powdered sugar in large bowl with whisk or electric beater. Add almond extract.
  • For best results, use butter that is at room temperature.
  • Add flour ½ cup at a time, whisking gently or beating on low. Then gently fold in the dandelions and mix carefully.
  • Divide dough in half and form two wide rolls on plastic wrap. Wrap tightly, and place roll in the freezer for 15 minutes.
  • Remove plastic wrap and slice in 1-inch thick slices.
  • Place on greased cookie sheets.
  • Bake them for 10 minutes at 300F.
  • Pop them back in the oven if they aren't golden brown.
  • Keep a close watch. They should take no more than 10-15 minutes to bake.
  • Cool on a rack.
  • Store in an airtight container or freeze.
