The chicken that we have frozen has done very well in the freezer. I do use food sealer bags to sore the meat in. The vacuum pack is worth the extra expense of the bags. I bought the sealer part at Goodwill. I also de-bone the chicken before packing it. I learned that after the first year. It is easier to use and thaw. I even save the little bits of meat into a bag for stir fry meat.
We also have learned that we need to age the meat. We haven't done this before, but we are now looking forward to doing so.
I would be willing to split an order of meat chicks. I have been wanting to order from Dunlap Hatchery out of Caldwell ID. PM if you would like to split the order. Most hatcheries will not ship less than 25 because they keep each other warm enough during the shipping time. You could order less but they may not be alive when you get them. So it is probably better to split an order than risk it especially at this time of year.
I have learned that I can't manage more than about 14 birds at a time. I am in a sub-division, and am limited in space. We have also learned that our limit for processing the birds is 14 birds in a a day too.
