Avoiding animals fats is one of the dumbest things diabetics and people with hypoglycemia are told to do. Animals fats are what people evolved to consume. There are ESSENTIAL fatty acids in animal fats...as in you have to have them to survive. There are essential amino acids in protein. There are NOT, however, any essential carbohydrates.
Sugars in the form of corn syrup, sugars, etc... are what cause reactive hypoglycemia. They trigger a huge insulin release and then you get a reactive plummet in blood sugar leaving you shaking, dizzy and in immediate need to eat more. FAT does NOT cause this reaction.
Many fruits are also horrible for diabetics. While it doesn't trigger insulin like glucose, fructose is very inflammatory and is very hard on the liver. It raises trglycerides and is a big factor in children today developing non-alcoholic fatty liver disease.
I used to have reactive hypoglycemia. I thought I was doing a good thing by using sugar-free creamer. While it doesn't have sugar it is loaded with carbohydrates from corn syrup as well as hydrogenated fats (these are VERY unhealthy!).
Now I use heavy cream or coconut cream. I sweeten with stevia or erythritol....Splenda when desperate.
