I love carrots. I eat a couple a week, I always buy organic. I came across a gluten free recipe that was a wonderful fresh carrot salad called carrot raita:
3-4 shredded or julienned carrots (the pampered chef thingey works really well)
1 cup or more greek style or regular plain yogurt (start with one cup and add more if you want the raita more wet)
1 tsp cumin
1 tsp paprika (you can use smoked if you wish)
Juice of one lemon and zest (roughly 2 tablespoons of juice. adjust seasonings as needed)
1/4 cup of raisens or craisens
salt and pepper to taste
Chili powder, about a tsp (add more to taste. I like chilpotle)
2-3 tsp honey
Mix all ingredients. This can be as sweet or spicy as you like.
This was wonderful with ribs tonight for dinner. I also had a little jicama that I added to the salad for more crunch.
