The instructions that came with my incubator says to never let the room temperature get below 59 degrees. It's a small (24 egg) incubator that I have. I don't know how big a unit you're interested in using, or how much fluctuation in ambient temperature it can handle. If you're buying one new, the manufacturer can probably give you specs. But I know that my incubator struggles to maintain temp if the room gets much below 65. I keep it in the warmest room (in the winter) in the house, so the ambient temp is usually around 72.
