As far as the "Show World" changing animals. I believe the weight for the Sumatras has been the same since 1883 (127 Years) when the Black Sumatras was admitted into the American Standard of Perfection... So if there was any major changes done to the breed it was before the "show world" started breeding them..
Now I don't mean to be a smart alec but the people in the "show world" try to keep the breeds of poultry as true as possible, more than I can say about hatcheries that breed for quantity and not quality..
