That sounds like dinner without anything else!Tuscan Salad with herb infused dressing
Ingredients:
Salad:
Head of romaine lettuce
Bunch of baby spinach
20 basil leaves chiffonade
Cherry or Grape tomatoes
4 oz Roasted Pine Nuts
Can of Cannellini Beans rinsed
Kalamata Olives (optional)
Red Onion
Red/Orange/Yellow Peppers
Diced Pancetta or Prosciutto (optional)
Dressing:
½ Cup Olive Oil
4 cloves garlic, crushed and minced
¼ Cup loosely packed Basil
⅛ Cup loosely packed oregano
¼ Cup loosely packed flat leaf parsley
¼ Cup lemon Juice or Balsamic Vinegar (I’ve also used Raspberry, wine, and Champaign vinegars)
Pinch of Salt
And pepper to taste
Red Pepper Flake (optional)
Make the salad and toss well.
Put the oil and garlic in a cold pan and then turn on a medium low heat. You’re steeping the garlic and you don’t want it to brown. Just as the garlic starts to turn color, take the pan off the fire and add the herbs and spices and stir well. Let it steep about 15 minutes, then remove the herbs and add the lemon or vinegar. Wisk well and once it’s cool, toss with the salad to coat and adjust seasonings as necessary.

I've had it as a meal as well. if you want a tex/mex solution, you can swap out the white beans for black beans, swap out basil with cilantro, and swap lemon with lime, add cumin and chili powder to the dressing and toss in some fresh corn. maybe even some jalapenos @KikisGirls that would play well at your place.That sounds like dinner without anything else!
Of course you'd also want to swap out the meat with chorizo and the cheese with a Mexican blend...
