Applesauce Cake Recipe - WANTED

My great-grandmother was the best baker! and cook btw. She never used a recipe, only her mind. A pinch of this a scoop of that, then throw in some black walnuts and raisins...you get the picture.

Well my family has been trying to recreate her applesauce cake since 1990 when we had to tell her that at 90 years old it just wasn't safe for her to be around the stove.

This is one that we make from our local Apple Hill... it's very good.

3 cups all-purpose flour
3 teaspoons baking powder
2 teaspoons baking soda
1/2 teaspoon salt
2 teaspoons ground cinnamon
4 eggs
2 cups white sugar
1 1/2 cups vegetable oil
2 cups applesauce
1 teaspoon vanilla extract


Preheat oven to 350 degrees F (175 degrees C).
Grease and flour a 10 inch tube pan.
Sift together the flour, baking powder, baking soda, salt and cinnamon. Set aside.
In a large bowl, mix together the flour, baking powder, baking soda, salt and cinnamon.
Make a well in the center and pour in the eggs, sugar, oil, applesauce and vanilla.
Mix well and pour into prepared pan.
Bake in the preheated oven for 50 to 60 minutes, or until a toothpick inserted into the center of the cake comes out clean.
Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
 
This recipe is taken from the Church Supper Cookbook edited by
David Joachim. The recipe is by Karen Russ, The Congregational Church, East Hampton, Connecticut. It makes a fruitcake-textured spice cake that keeps well.

Special Applesauce Cake.

3 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons cinnamon
1 teaspoon cloves
2 teaspoons nutmeg
1 cup butter
1 cup sugar
2 eggs, beaten
2 cups warm applesauce
1 cup coarsely chopped walnuts
1 cup raisins

Sift together flour, baking soda, salt, cinnamon, cloves and nutmeg. Cream butter and sugar. Add eggs. Alternately stir in sifted dry ingredients and applesauce. Stir in walnuts and raisins. Mix well. Pour into well-greased 10" tube pan. Bake at 350 degrees for 60-70 minutes. Cool 20 minutes, then turn out of pan.
