I dunno, this sounds like a nightmare waiting to happen. How is a restaurant going to keep track of every byc egg they get from all over the U.S., especially if some kind of outbreak occurs? Right now, they know exactly where every egg comes from, and if they use the backyard system, they will get eggs from WHO knows where. Are they going to mark each and every egg, and track it in a computer?? I think I'll wait and see how this plays out. And just because somebody is an inspector, does that mean they know what to look for, as in sickness in chickens, etc?
My suggestion is, those people who are concerned about knowing where their food comes from, go buy from the people near you who raise chickens. Bypass the eggs at walmart, or the grocery store, support your LOCAL economy. Ther's a lot more involved to this than they think. As long as I sell eggs from my farm, or at the farmers market, I don't have to be npip or tested, or monitored by the guvment. Once I start selling to restaurants, groceries, across state lines, etc., the game changes. I had already checked several months ago on this.
I'm not trying to be negative, just saying, it's not going to be as easy peasy as many of us would like.
 
Oh, this would make it so I could keep my new homegrown pullets instead of selling them. I have:

3 dekalb amberlinks-laying
3 golden comets -laying
1 production red-layng
6 easter egggers-1 laying the rest within the next month or so (or could be laying brown eggs)
1 silkie ameracauna-not yet laying
6 amberlink/golden comet crosses-2-3 are laying

I am getting 9 large eggs a day (some aren't laying yet) at the moment I am only getting 1 blue/green egg the rest are various shades of brown. I would be able to offer about 3 dozen a week. Of course if I get picked I would be able to offer a lot more than that in the coming months as I wouldn't be getting rid of the pullets that I was planning on selling, and they should be starting to lay within the next month. I was getting 6-7 eggs a day from 8 hens all winter long as well.
 
Is there a zone leader for my area yet? I'll be glad to assist or help coordinate when the dust settles.

There are so many guidelines to properly handling eggs I doubt most people are even aware of. We are even required to purchase brand new cartons. Each egg is to be candled and graded, washed in the proper temp and on and on. I'm pretty sure most 'backyard' people are not following all the proper guidelines. One reason I sell my eggs for $4 a dz is the cost of the carton. They are running about .35 for 200.
 
We are in NW Louisiana close to Shreveport and Bossier City...the Ark-La-Tex. Please let us know when a Zone Leader has been assigned to our area.
