The 2 times that I can expect to have to watch the bator & keep adjusting until it settles is when the eggs are first put in (I set up & run the bator for 2-3 days ahead) & when I do lockdown at Day 18. When the eggs first go in, they have their own moisture or absorb more moisture & they become a "heat sink" holding heat so, that creates changes that usually settle down within a day. When the "lockdown" occurs where the lid is no longer opened until after hatch & the humidity is raised (in my case it's to 55%) there are temp & humidity changes that I have to watch for a day. You'll just have to monitor closely & make only minor adjustments at a time, so you don't get spikes.
Check out page one of this thread, you may be interested in reading the "dry incubation" method info that I use. From Days 1-17 my humidity is at around 40% to 42% or so & during lockdown it goes up to around 55%. You might want to calibrate your hygrometer also to get a truer reading. At day 7 or 10 you will get to see if the eggs are developing & put your mind at ease more. Good luck, enjoy the process!
