One reason - Money.
People have asked hatcheries to stop with the false claims or ask why they do it for years, and the most we get besides being ignored is denial. Especially in the Ameraucana vs EE sense. Slowly over time hatcheries are admitting they don't sell Araucanas, except Murray McMurray which sadly is a huge business, but still, other hatcheries deny that their "Ameraucanas" aren't true to breed either.
Think of it, if hatcheries all one day said they previously were lying and they're actually selling mutts that may lay whatever color, look like whatever (but likely bearded and yelllow skinned) - How much will they lose?
